Serifos baked garbanzos recipe
A vegan, thousands years old recipe from a tiny island of Cyclades, Serifos, Greece. Very easy to make and very tasty!

- For 2 people
- Ingredients:
- 1 Large onion,chopped
- 1 tbsp Minced garlic (one clove)
- 500 gr frozen garbanzos
- 5 tbsp Olive oil
- 1 tbsp Fresh Rosemary, finely chopped
- 1 tbsp Dry Oregano or thyme
- Ground black pepper
- 1 l Boiling Vegetable broth
- Salt, according to taste

Method:
- Preheat oven at 180 C. In a casserole sauté onion, garlic and garbanzos for about 5 min. Add salt and broth and let it simer for about 15 mins.
- Empty the garbanzos in a deep, oven-safe tray, add rosemary and oregano. Bake for about 20 mins or until the broth is absorbed and garbanzos start having a nice roasted color.
- Add black pepper and serve.
