Serifos baked garbanzos recipe

A vegan, thousands years old recipe from a tiny island of Cyclades, Serifos, Greece. Very easy to make and very tasty!

  • For 2 people
  • Ingredients:
    • 1 Large onion,chopped
    • 1 tbsp Minced garlic (one clove)
    • 500 gr frozen garbanzos
    • 5 tbsp Olive oil
    • 1 tbsp Fresh Rosemary, finely chopped
    • 1 tbsp Dry Oregano or thyme
    • Ground black pepper
    • 1 l Boiling Vegetable broth
    • Salt, according to taste
  • Method:
    1. Preheat oven at 180 C. In a casserole sauté onion, garlic and garbanzos for about 5 min. Add salt and broth and let it simer for about 15 mins.
    2. Empty the garbanzos in a deep, oven-safe tray, add rosemary and oregano. Bake for about 20 mins or until the broth is absorbed and garbanzos start having a nice roasted color.
    3. Add black pepper and serve.
